Features
Light, delicate and floral sweetness
Our acacia honey is produced in bee pastures rich in white clusters of robinia (acacia) flowers on the slopes of Pohorje. Due to its very high fructose content, it is naturally extremely light (≤ 15 mm Pfund) and remains liquid even a year after being poured. The smell is reminiscent of fresh acacia flowers, and the taste is gentle and neutral, so it sweetens tea, yogurt or fruit smoothies without changing their aroma.
Rich in minerals and microelements
Compared to other varietal honeys, acacia honey stands out for its favorable fructose:glucose ratio and above-average levels of potassium , calcium , and magnesium , which contribute to electrolyte balance and normal muscle function. A study* shows that 20 g of acacia honey covers approximately 3% of the recommended daily intake of potassium for adults.

Mild antioxidant power of flavonoids
Acacia honey contains moderate but stable amounts of flavonoids (luteolin, kaempferol) and traces of vitamins B2, B3, B5 , which support energy metabolism. A clinical study* showed that participants who consumed 25 g of acacia honey experienced a 12% improvement in throat moisture and perceived irritating cough.

A regular dose of one tablespoon (≈ 15 g) in the morning or before exercise contributes to well-being and natural hydration.
Naturally moderate glycemic index
Due to its relatively high fructose content, acacia honey has a low to medium glycemic index (~50) , meaning it raises blood sugar levels more slowly than table sugar. It is suitable for athletes and anyone looking for a long-term source of energy – but it is still a sweetener, so consume it in moderation.
Crystallization – a sign of authenticity
Like any raw honey, buckwheat honey crystallizes over time . Due to the specific ratio of glucose to fructose, this usually begins after 2-3 months of storage below 20 °C. The crystals are small and homogeneous, so they remain spreadable. To liquefy, place the jar in a warm water bath (< 40 °C) and stir several times - this protects the sensitive flavonoids from overheating. EatingWell Better Homes & Gardens
Comparison with linden honey
While linden honey is known for its essential oils and distinct herbal notes, acacia honey is the champion for its mild taste and long-lasting liquid structure. In practice, this means that linden honey is preferred for colds, while acacia is used as a universal sweetener that does not change the color, taste, or smell of beverages.
Tips for use and storage
- In the morning: a teaspoon of honey dissolved in a lukewarm (not hot) drink activates the metabolism.
- Before bed: mix it with lukewarm milk and cinnamon for a soothing ritual.
- In the kitchen: It makes a surprisingly beautiful accent on whole-grain pancakes, chocolate brownies, or even a vinaigrette for nut salads.
- Store in a dark place between 15–25 °C ; light and heat accelerate the loss of aromas and enzymes.
