Recipe: Sugar-free gingerbread with forest or chestnut honey - An authentic taste of tradition and nature

Ingredients (for about 25–30 gingerbread cookies):

  • 200 g flour (semi-wheat or spelt)
  • 100 g ground walnuts or hazelnuts
  • 80 g butter (room temperature)
  • 4 tablespoons of forest or chestnut honey
  • 1 egg (room temperature)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ginger (optional)
  • A pinch of salt

    For the glaze (optional):

    • 100 g powdered sugar
    • 1–2 tablespoons lemon juice or a little water

    Procedure:

    1. Prepare the dough: In a large bowl, mix the flour, baking powder, ground walnuts, spices and a pinch of salt. Add the butter, egg and honey. Knead to a smooth dough. If the dough is too crumbly, add a little more honey.
    2. Cold rest: Wrap the dough in foil and place it in the refrigerator for 30 minutes.
    3. Shaping and baking: Preheat oven to 180°C. Roll out the chilled dough on a floured surface (about 0.5 cm thick) and cut out any shapes you like. Bake the cookies on baking paper for 10–12 minutes, until lightly browned.
    4. Cooling: After baking, let them cool completely before storing or decorating.
    5. Glaze and decoration (optional): For the lemon glaze, mix the powdered sugar with lemon juice to make a thick but spreadable liquid. Brush the cooled gingerbread with the glaze or decorate with walnuts, hazelnuts or dried fruit. You can also use chocolate or sugar sprinkles if you like.

        Hints and tips:

        • Honey for sweetness: Forest honey adds a slightly resinous note, while chestnut honey adds a slightly bittersweet aroma. Both choices are great!
        • Storage: Store the gingerbread in a sealed container. After a few days, they will become softer and more aromatic.
        • Natural icing: Instead of sugar, you can use a icing made from creamy honey and lemon juice for coating or decoration.
        • Adding spices and nuts: If you like strong flavors, you can add a little cardamom, nutmeg or ground allspice. Walnuts and hazelnuts in the dough provide extra texture and rich flavor.
